Hey everyone, welcome back. Today I'm going to walk you through making sourdough bread from scratch — no starter experience needed. We'll cover feeding your starter, mixing and autolyse, the stretch-and-fold technique, bulk fermentation timing, shaping the loaf, and finally baking in a Dutch oven for that perfect crust. Let's start with feeding your starter — you want it active and bubbly, roughly 4 to 6 hours after feeding. Once it doubles, you're ready. For the dough, we're using 500 grams of bread flour, 375 grams of water, 10 grams of salt, and 100 grams of your active starter. Mix the flour and water first, let it rest for 30 minutes — that's your autolyse. Now add the starter and salt, and we'll do four sets of stretch and folds, 30 minutes apart. After that, bulk fermentation for about 4 to 6 hours at room temperature. You'll know it's ready when the dough has increased by about 50 percent and feels jiggly. Next, shape your loaf into a tight round, then cold-proof overnight in the fridge, 12 to 14 hours. Bake at 450 degrees in a preheated Dutch oven — 20 minutes covered, 20 uncovered.
